Low fat Lentil Salad

Description:

This is the lentil salad I made at Mikal's party. It is low fat and very yummy!

Ingredients:

½ cup lentils, washed

1 ½ cups water

1 cup chopped tomatoes

¼ cup sliced green onion

1 cup diced carrots

¾ cup chopped green pepper

1 ½ cups broccoli (chopped very small)

1 T. dried parsley

¾ cup wheat rice

Dressing:

3 T. seasoned gourmet rice vinegar (light)

1 T. lemon juice

1 ½ t. Dijon mustard
Directions:

Add lentils to water in a medium saucepan and bring to a boil. Reduce heat, cover, and simmer for 20 minutes. Drain. Cook rice according to package directions. Prepare vegetables while lentils are cooking. Mix lentils, rice, and vegetable. Mix dressing ingredients and pour over vegetable mixture. Chill well before serving.
