This one is from Rachael Ray and yummy! Although, I have altered it a little.
1 lb. spaghetti or linguini
1/2 cup EVOO (extra virgin olive oil)
4 links (12 oz) pre-cooked chicken sausage cut into thin rounds(Turkey works, too)
4 oz. feta cheese, crumbled
1 green bell pepper, seeded and thinly sliced
1 red bell pepper, seeded and thinly sliced
1 lemon (zest and juice)
1/2 bunch mint, leaves torn
salt & pepper to taste
Cook and drain the spaghetti. Heat the EVOO in a frying pan over medium-high heat. Add the sausage, veggies and salt & pepper. Cook until warm and tender. Toss all the ingredients together in a large bowl. Serve warm or cold.
