I started making apple pies this summer - my first ones ever - and they turned out to be SO yummy!
The crust is Annette Brems' crust:
Makes 2 shells or 1 with a top.
2 cups flour
1/2 tsp. salt
cut in 1 cup cold real butter
add 1/2 cup milk
*Tip: just mix it all in the mixer, but be careful to not mix it too much - the more you touch the dough, the tougher it gets.
The filling:
2/3 cup sugar
1/4 cup flour
1/2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
dash of salt
8 cups thinly sliced peeled apples (cortland apples are great)
2 tbs. butter, if desired
Mix the sugar, flour, cinnamon, nutmeg, salt and apples. Pour onto pastry-lined pie plate. Cut butter into small pieces and sprinkle on apples. Cover the top with another pastry. Cut slits into the top pastry. Brush the top pastry with milk. Sprinkle cinnamon and sugar on top. Bake at 425 degrees for about 40 minutes, or until the pastry is golden brown.
