Baked Chicken Parmesan
3 lbs. boneless skinless chicken Cut into 4-6oz pieces
2 cups Panko bread crumbs
3T Tuscan garlic seasoning
½c Parmesan cheese
½ tsp black pepper
½ cup flour
Salt and pepper
2 eggs
3T olive oil
Spaghetti
sauce
1T olive oil
1 onion diced
6 cloves garlic minced
2 14oz cans crushed tomatoes
1 14oz can diced tomatoes
1 can tomato sauce
1 ½ tsp oregano dry
1 ½ tsp Italian seasoning
¼ tsp garlic powder
½ tsp parsley dry
1 tsp sugar
¼ tsp basil dry
¼ tsp black pepper
1 ½ cup shredded mozzarella cheese
¼ cup parmesan cheese
Spaghetti noodles cooked to package instructions drained and
tossed with olive oil.
Directions
–Preheat oven to 350
In a flat container combine the bread crumbs, Tuscan seasoning,
pepper and parmesan cheese.
In a dish beat the eggs.
In a pie plate or other shallow dish put the flour.
Salt and pepper the chicken pieces.
Dip each chicken piece in the flour.
Dip chicken in the egg.
Coat the chicken with the bread crumb mixture.
Place on a cooling rack on a large baking pan (jelly
roll/cookie sheet with edges)
Repeat until all the chicken is on the rack.
Drizzle olive oil over the chicken pieces or spray with
cooking spray.
Bake for 25 min or until meat thermometer reads 160 degrees.(this
may be longer if the chicken is thick)
*--While
the chicken bakes start the water for the pasta. Cook pasta to package
directions--*
Heat a large skillet to med hi heat, put 1 T olive oil and
the onion and garlic.
Sauté until clear and starting to brown.
Add the cans of tomatoes and sauce. Stir well.
Add all of the seasonings to the sauce.
Simmer uncovered until thickened to desired consistency,
around 10-15 min.
In a large baking pan (10x15) pour the sauce.
When the chicken is done baking
Place the chicken pieces on top of the sauce.
Sprinkle with the mozzarella and parmesan cheese
Bake at 500 degrees until the cheese is melted and the sauce
is bubbling. (5-10 minutes)
To serve place a serving of noodles on a plate and chicken
with sauce under it on top of the pasta
Garnish with a little fresh basil or parsley and some grated
parmesan cheese.
